Olshan Advises Chef Greg Baxtrom on Marquee Restaurant at Rockefeller Center

Bloomberg News recently reported that Olshan client Greg Baxtrom, chef and co-owner of Olmsted and Maison Yaki, will be opening a new marquee restaurant in Rockefeller Center in the Spring of 2022. Chef Baxtrom’s new offering is part of a wave of concepts scheduled to open at the iconic dining location in the next calendar year. Though Baxtrom has not announced a name or menu for his Rockefeller restaurant, he assures fans it will be both familiar and different: “I’m intending to play to crowd favorites—an Olmsted version of oysters Rockefeller,” he said. Tishman Speyer, the owner and operator of Rock Center, believes that offering new destination dining will attract crowds – both tourists and locals – back to the area. Kenneth Silverman, Jeremy King, and Nicholas Hirst acted as co-counsel to Baxtrom for his Rockefeller Center project.
